BASIC INFORMATION:

• Vines: Goblet vines, between 50 – 70 years old.
• Production: 50.000 bottles.
• Grape Variety: 100% Tempranillo.

TECHNICAL INFORMATION:

• Degrees Alcohol: 14.00 % Alc. by Vol. Total Acidity: 4.95 g/l (Tartaric acid).
• Alcoholic Fermentation: At a controlled temperature of up to 27ºC with daily manual stirring over of the must and a light maceration process respecting the characteristics of the Tempranillo grapes.
Duration of Fermentation: 6-10 days.
• Malolactic Fermentation: Started in a natural way in stainless steel deposits immediately after the alcoholic fermentation, and carried out at controlled temperatures of between 20-25º C for 12-16 days.
• Cask Ageing: 36 months in oak casks – 20 months in semi-new American oak, and 16 months in new French oak casks.
• Stabilisation and Filtration: So as to conserve all the natural quality of this wine, it is not stabilised or filtered, so some sediment might be present which in no way affects its quality.

TASTING NOTES.

This wine is an attractive and pure glossy deep garnet red, with brick-red tones on the rim. A complex and unmistakeable array of spicy aromas, from its time spent ageing in oak casks, which evoke toasted and balsamic reminders of cocoa, coffee, and liquorice.
Full flavoured and with excellent structure, this full bodied wine is full of character, and flows over the palate beautifully. This is a wine that has the potential to improve even further in the bottle for some years to come.
