BASIC INFORMATION:

• Vines: Goblet vines, more than 80 years old
• Production: 10,000 bottles. This wine is only made in years when the quality of the harvest is judged to be suitably excellent.
• Grape Variety: 100% Tempranillo.

TECHNICAL INFORMATION:

• Degrees Alcohol: 14.17 % Alc. by Vol. Total Acidity: 5.07 g/l (Tartaric acid).
• Alcoholic Fermentation: At a controlled temperature of up to 27ºC with daily manual stirring over of the must and a light maceration process respecting the characteristics of the Tempranillo grapes.
Duration of Fermentation: 6-12 days.
• Malolactic Fermentation: Started in a natural way in casks (20%) and stainless steel deposits (80%) immediately after the alcoholic fermentation, and carried out at controlled temperatures of between 20-25º C for 10-15 days.
•Cask Ageing: 26 months in oak casks – The first 13 months in new American oak, followed by 13 months in new French oak.
• Stabilisation and Filtration: So as to conserve all the natural quality of this wine, it is not stabilised or filtered, so some sediment might be present which in no way affects its quality.

TASTING NOTES.

This beautifully harmonious wine is both elegant yet intensely flavoured. It is particularly carefully crafted, and stands out as being extraordinarily fruity, revealing a painstaking grape selection.
Its subtle toasted characteristics from its time spent ageing in oak are perfectly integrated, and appear alongside hints of cocoa. Full of life, this complex wine has excellent body and tannins, and is particularly well rounded and smooth, with hints of chocolate, liquorice and mineral notes.
