    THE WINE-MAKING PROCESS

 

The techniques used at Viña Solorca include destemming the grape bunches, while at the same time keeping the grapes as undamaged as possible.

 

We also keep the grapes from young and old vines apart throughout the wine making process, and carefully control the alcoholic fermentation temperatures, applying correct macerations for the type of wine to be made.

 

We take advantage of the force of gravity to transport the solid grape matter in small stainless steel wagons which are unloaded directly into the press, rather than being pumped.

 

By only pressing the grapes very lightly, we can obtain the best quality wine, and we carefully control the conditions for the second fermentation (the malolactic fermentation).

 

Finally, general and continuous analysis is carried out throughout the whole wine-making process so that we are always aware of exactly how the wine is progressing, and whether it will be destined for immediate consumption of cask ageing.
